“The Coche-Dury of Ingelheim.” A bold line—half tongue-in-cheek, yet not without substance. There’s a real stylistic echo: density, ambition, and depth, matched with striking clarity, precision, and definition.

Carsten Saalwächter, the young force behind this nearly 200-year-old estate, perfectly embodies the renaissance of Rheinhessen. A new generation rooted in tradition yet open to the world—blending local heritage with outside influence, particularly from Burgundy.

Based in Ingelheim, on the south bank of the Rhine, Carsten farms around 8 hectares of limestone-rich, wind-swept vineyards, many untouched by land consolidation and rich in old vines and French clones. His focus: Silvaner, alongside Chardonnay and Pinot varieties, with a particular devotion to Silvaner—treated here with the same seriousness as Riesling elsewhere.

Across the Rhine, slate soils bring a contrasting expression, adding another dimension to the range.

His philosophy is unapologetically his own. Inspired by Burgundy, he works with long, firm pressings, oxidative handling of must, slow fermentations on lees and extended elevage (12–18 months for whites, up to 24 for reds). The reds see whole-cluster fermentation with gentle infusion. The result: wines that combine Burgundian texture and breadth with the tension and cut of cool-climate Germany.

Tasting these wines gives a rare sensation - something both original and immediately convincing. There’s no trend-following here, just a clear, confident vision. Depth, texture, quiet power, yet always precise and terroir-driven. The talent, the obsession, the vision—it’s all there. Rooted in limestone soils of Rheinhessen, inspired by Burgundy, yet fully its own. Precision, elegance, and depth in perfect balance.

Spätburgunder Alte Reben trocken 2023
Pinot Noir from oldest vines—lean sandstone soils, low yields. Aged 24 months in used barrels. Elegant, vibrant, fine-grained. Red fruit, lifted herbal notes.
Chardonnay -R- trocken 2022
a special bottling, from best plot (80 yo vines), aged 30 months on fine lees in burgundy oak barrel. Amazing balance : density, reduction and sharp acidity. Wow !
Chardonnay trocken 2023
orchard fruit, citrus lift, brioche and toasted nuts over cool mineral tension; silky texture, vibrant acidity, discreet oak, long saline finish. Top fruit, gentle pressing, partial skin contact, aged 18 months on full lees in 600L oak (1/3 new); when Burgundy meets Rheinhessen !
Weisser Burgunder trocken 2023
raised on full lees in traditional 600L oak casks, building texture and quiet complexity. Yellow apple, quince, stone fruit, herbs, and subtle lees. Silky texture, fresh acidity, long saline finish.
Silvaner Alte Reben trocken 2023
old vines (50 yo) from limestone soil. Just 11.5%, a razor-sharp wine. Carsten calls it his “drinking water”: ultra-refreshing but with real edge. Raw, intense, smoky, herbal, pine, saline with gripping acidity. Citrus sits behind a firm, phenolic backbone. A unique Silvaner.
