Clos des songes
Livio Capaldi & Sarah-Élisabeth Henry

Clos des Songes is a new name in Burgundy, founded in 2025 by Livio Capaldi and Sarah-Élisabeth Henry in a redesigned old house in Bouze-lès-Beaune. Livio, a former baker turned food-industry entrepreneur, developed a deep interest in yeasts and fermentation through years running his own wine cellar in the Alps. Sarah-Élisabeth trained as a sommelier in Bordeaux before working three vintages in Burgundy, with Guillaume Glantenay in Volnay and two seasons alongside Étienne and Mathilde Grivot in Vosne-Romanée. Their paths crossed in Livio’s cellar, and a shared vision quickly became a winery of their own. A deep passion for wine and the desire to let their own sensibility speak. Production is tiny with focus on quality and built entirely on trusted relationships with growers, returning to the same sources vintage after vintage, since continuity is what deepens real understanding of a terroir over time. Grape selection is rigorous from the start: fruit is harvested into small 12kg crates, sorted once in the vineyard and again at the winery on a vibrating and sorting table, all inside a fully air conditioned space to protect the integrity of the grapes before vinification even begins. In the cellar, the philosophy is to guide rather than control. Interventions and additions kept to a strict minimum, with a preference for accepting a degree of uncertainty over intervening simply for reassurance. Reds are vinified 100% whole-bunch to bring freshness, structure, finesse and depth to Pinot Noir, whereas the whites are barrel-fermented on the lees without settling, pressed slowly in a vertical press to respect the fruit’s delicacy. Everything is aged 12 months in used oak — never new to avoid what matters most: grape variety, terroir and vintage. The result, in their words, is wine built to reveal an identity rather than manufacture a style.
Why Vibrant: An exciting micro négociant debut under two new Burgundy rising stars. Pure, reflective Burgundy with reds built on finesse and freshness rather than weight, whites with texture and tension rather than oak. A style defined by restraint: nothing manufactured, nothing imposed, just terroir left to speak for itself.First vintage, worth watching closely.
