Par Lily is a boutique Burgundy micro-négociant founded in 2023 by Lily, a Hong Kong born winemaker whose journey combines technical expertise with hands-on experience at some of France's most respected estates. Based in Nantoux, Burgundy, Vin Par Lily produces tiny quantities of terroir driven Burgundy wines, sourcing meticulously farmed fruit from carefully selected vineyards across the Côte d'Or. Lily represents a new generation of Burgundy winemaking—where technical knowledge meets restraint.

After beginning her career in wine import and distribution, Lily moved to France in 2016 to pursue her ambition of becoming a winemaker. She completed a Master's degree in Viticulture and Oenology before refining her craft at renowned domaines including Domaine Thibault Liger-Belair, Didier Dagueneau, Stéphane Ogier and Château Pape Clément. These experiences shaped a philosophy centred on precision, transparency and allowing every vineyard to express its unique identity.
 

A Minimal Intervention Approach to Burgundy
 

Working closely with trusted growers, Lily carefully selects fruit from sites that best reflect the character of each appellation. In the cellar, intervention is deliberately restrained. Mechanical actions are limited to avoid unnecessary stress on the grapes, spontaneous fermentations are encouraged, and every wine is matured exclusively in neutral oak to preserve freshness, purity and site expression rather than oak influence.

Rather than pursuing a recognisable house style, every cuvée is guided by the vineyard and vintage. The result is a collection of elegant, vibrant Burgundy wines defined by balance, texture and precision.

Even the labels reflect this philosophy, visually illustrating each wine's structure and personality—where thoughtful design becomes an extension of the winemaking itself.

Beaune Premier Cru "Clos des Aigrots" 2023
Production: 569 bottles
Produced from one of Beaune's finest Premier Cru vineyards, this wine is refined and beautifully structured. Layers of red berries, rose petals and subtle spice are supported by fine tannins, vibrant freshness and a long mineral finish that reflects the pedigree of the site.
Hautes-Côtes de Beaune Rouge 2023
Production: 575 bottles
A beautifully approachable Pinot Noir bursting with red cherry, raspberry and delicate spice. Silky tannins, bright acidity and exceptional freshness make this an elegant expression of the Hautes-Côtes de Beaune.
Bourgogne Chardonnay 2023
Production: 297 bottles
An expressive Burgundy Chardonnay offering aromas of white flowers, ripe pear and citrus. Generous on the palate yet finely balanced, combining creamy texture with refreshing minerality and impressive precision.
Bourgogne Aligoté 2023
Production: 584 bottles
Sourced from vineyards between Nolay and Saint-Aubin, this Bourgogne Aligoté is aged on its lees to build texture while retaining the freshness and mineral drive the variety is celebrated for. Rounded yet energetic, it finishes with vibrant citrus and chalky precision.
