In 2017, Patrick Johnston and Sara Cunningham thought doing a harvest “just once” would be fun in Savigny-lès-Beaune, but they never left. By 2020, they were making wine for themselves at Maison Harbour. After small early vintages, production grew to 17 barrels in 2022 and 25 barrels in 2023, keeping output deliberately tiny. Si Tu Sais is a tiny micro-négoce based in the village of Chamilly (nearby Chassagne Montrachet). Patrick and Sara collaborate closely with chemical-free, biodynamic growers, sourcing top-quality grapes to craft wines they love: crisp, clean, acid-driven, and subtly spiced. Patrick cites Vincent Dancer as an influence, yet humbly describes their approach as “modern Burgundy style”: minimal intervention, vibrant and precise. The duo emphasizes purity of fruit, gentle aromatics via low-temperature fermentation and mostly old barrels for subtle oxygenation. Whole bunches are used carefully, balancing structure without introducing greenness by monitoring how long stems remain in contact with the juice. The name Si Tu Sais reflects Burgundy’s intimate networks of growers and winemakers, and playfully nods to “if you know, you know".
