Sêves (Marie & Foulques) – Bouzeron
After working for people like Claire Naudin, Chanterêves or Cassiopée, Marie and Foulques founded their own estate (Sèves) in 2023. They work a single 0.63-hectare parcel, Les Cordères, in Bouzeron
: a stony, northwest-facing site planted in 1981 at the top of the hill (380m). Bouzeron—the only Burgundy appellation dedicated solely to Aligoté— here delivers a complex, balanced wine
from low-vigor vines rooted in clay-silt soils over white marl.

Wine style : organic, little intervention, no sulfur during vinification, indigenous yeasts. Full fermentation and ageing in oak (228L and 400L) during 12 months, then 5 months
in stainless steel tank. No fining , no filtering. Not a casual aligoté !

The hallmark salinity of Bouzeron meets the natural fres90:93hness of Aligoté. The nose is fruity and fleshy, with notes of pear, quince, lime while the palate is pure and restrained, carried by white-flower aromas and stone fruits with a great pastry hint.
