Thomas Tixier


Thomas Tixier is based in Courgis — Chablis’ organic stronghold, home to Alic e & Olivier De Moor and Thomas Pico (Pattes Loup). In a region still largely conventional, Courgis stands apart.
Trained in Beaune and Dijon, Thomas worked for his family estate before early exposure to low-intervention wines with De Moor.
In 2022, he launched his own project: 4 hectares converted to organic, farmed with a minimal-intervention mindset inspired by his neighbors. Two key plots:

Grosse Terre — 1970s plantings on marl & limestone, low yields, high precision

Corvée — 1980s massal selection on richer soils
In the cellar, Thomas favours spontaneous fermentations, use of old oak barrels, no fining or filtration and the only additions being small doses of SO2. This is a style of Chablis that strikes a great balance between the classic, mineral driven wines of the region and the more open and soft styles of wine you might find from Courgis.
The result: vibrant, chiseled and pure Chablis that put Thomas as the new wave of Chablis, alongside his friend Tommy Chevallier.
